A place in your everyday cooking
Stir in as the melon-seed base fries. Crayfish carries egusi from nutty to savory.
Add early in the simmer so the savory flavor runs through the whole pot.
For jollof, add with the tomato base. Stir into fried rice for savory depth without adding heat.
Classic with ewa agoyin and moi moi. A little goes a long way in a bean pot.
The other side of the Atlantic
Stir into the broth base where dried shrimp would go. It dissolves in rather than sitting whole, so the savoriness runs through the bowl.
Toast your chiles, then add the crayfish ground. Skip the grinding step — it is already there.
Fold straight into the batter. Start at two tablespoons for a standard batch and taste the mix before frying.
Our own crossing: guajillo and tomato under a Nigerian jollof, with crayfish tying the two together. This is the dish the brand is named for.
West African roots. A Mexican kitchen.
We’re a small family business where West African and Mexican food cultures meet. Our crayfish comes from Igbokoda, Nigeria, and is ground and packed in small batches in Oregon. Familiar ingredients, ready for the food you love to cook.
